Lemon Garlic Shrimp and Gnocchi

This dish is a delightful combination of tender shrimp, pillowy gnocchi, and a bright, creamy lemon-garlic sauce. Here's a simple recipe you can follow that delivers gourmet results in minutes.

INGREDIENTS
500g Peeled Black Tiger Prawns or Pacific Bay Jumbo Shrimp
1 package Gnocchi
1/4 cup Lemon Juice
1 cup Chicken Broth
1 tbsp Frozen Minced Garlic
2 tbsp Olive Oil
Salt, to taste
1/2 cup Cooking Cream
Black Pepper, to taste
1/4 cup chopped Fresh Parsley, for garnish

PROCEDURE
Cook the gnocchi. Cook Gnocchi according to package directions. Drain and toss with a teaspoon of olive oil to prevent sticking. Set aside.

Sauté garlic and cook shrimp. Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat. Add minced garlic and cook for 1 minute, or until fragrant. Add shrimp to the skillet and cook for 2 to 3 minutes per side, or until pink and cooked through. Season with sea salt and black pepper to taste. Remove cooked shrimp from the pan and transfer to a plate.

Make the sauce. Using the same skillet, add chicken broth, lemon juice, and cooking cream. Bring to a simmer and cook for 2 to 3 minutes, or until slightly thickened and creamy.

Combine and serve. Add the cooked gnocchi and shrimp to the skillet and toss to coat with the sauce. Garnish with chopped fresh parsley and serve immediately.

NOTES:
For added greens, you can stir in a cup of frozen spinach during the last minute of cooking the sauce.
