Razor clams are best known for their incredible flavor which well-balanced between sweetness and brininess; and, the texture is meaty, firm, and juicy. These clams are medium sizes, and meaty since over 50% of this soft-shelled clam is meat.
It's important to clean these clams under running water to get rid of any excess sand. The classic method for cooking razor clams is by steaming them in a flavoured liquid, perhaps with a splash of wine and some sweated onions and garlic. You can also prepare in"a la plancha" style as they do in Spain which is cooking it on a pan over high heat.
