Ingredients

1kg Salmon Skin
2 tbsp canola oil

For the Seasoning

1½ tsp sea salt
1 tsp garlic powder
¾ tsp onion powder
½ tsp ground white pepper
½ tsp dried dill
1 tbsp finely grated lemon zest

Optional Japanese Finish

2 tsp furikake seasoning

Procedure

Prepare the Salmon Skin. Remove any remaining salmon flesh from the skin and trim it into manageable pieces. Pat completely dry with paper towels.

Dry Overnight. Arrange the salmon skin in a single layer on a wire rack set over a tray. Refrigerate uncovered for 8 to 12 hours. This drying step is the key to achieving extra crispy salmon skin.

Lightly Oil the Skin. Toss the dried salmon skin with the canola oil until lightly coated. Do not season with salt yet, as it can draw moisture back to the surface before cooking.

Air Fry Until Crisp. Preheat the air fryer to 180°C. Arrange the salmon skin in a single layer and cook in batches of about 100 to 150g. Air fry for 10 to 15 minutes, turning halfway through, until the skin is deep golden, flat, dry, and completely crisp. Thicker pieces may need another 2 to 3 minutes.

Cool Before Seasoning. Transfer the salmon skin immediately to a wire rack and let it cool for 3 to 5 minutes. Avoid stacking the pieces while they're still hot to prevent trapped steam from softening them.

Season and Serve. Combine the sea salt, garlic powder, onion powder, white pepper, dried dill, and lemon zest. While the salmon skin is still slightly warm, toss gently with the seasoning until evenly coated. For a Japanese-inspired version, finish with furikake before serving.
