Baked Whole Barramundi (Apahap) with Lemongrass & Tomatoes

This baked barramundi recipe is a simple, aromatic way to cook a whole fish at home. The fish roasts gently with lemongrass, tomatoes, onions, and lemon, creating a light savory broth that naturally forms in the pan. The result is a rustic seafood dinner that feels special but is easy enough for a weeknight meal.

Baked Whole Barramundi (Apahap) with Lemongrass & Tomatoes

INGREDIENTS

1 Whole Barramundi (Apahap), about 800g
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 bunch lemongrass, trimmed and lightly crushed
2 red onions, sliced
1 lemon, sliced in half
2 tomatoes, cut into wedges
4 cloves garlic, lightly crushed

PROCEDURE

Preheat the oven and prepare the roasting dish. Preheat the oven to 190°C so the fish cooks evenly and develops gentle roasting aromas.

Season and prepare the barramundi. Pat the fish dry and lightly score the skin on both sides. Rub with olive oil, sea salt, and black pepper.

Stuff the fish with aromatics. Fill the cavity with crushed lemongrass and sliced onions.

Arrange the fish and vegetables. Place the fish in a baking dish and scatter tomatoes, garlic, and remaining onions around it.

Roast the barramundi until tender. Bake for 25 to 30 minutes until the flesh flakes easily.

Finish and serve. Spoon the roasting juices over the fish before serving.
