Tom Yum Soup with Atlantic Cod Fillet

INGREDIENTS

500g Pacific Bay Atlantic Cod Fillet, cut into 2-inch chunks
1 pack Tom Yum Soup Spice Paste
4 cups water or stock
4-5 fresh mushrooms, halved
7 cherry tomatoes, halved
2 tbsp fish sauce
1 small red chili, sliced (optional)
1 cup coconut cream
Fresh coriander leaves
1 lime, sliced

PROCEDURE

Prepare the Tom Yum broth base. Bring water or stock to a boil in a pot and dissolve the Tom Yum paste.

Cook the mushrooms and tomatoes. Add mushrooms and cherry tomatoes and simmer for 3 to 4 minutes until slightly tender.

Gently cook the Atlantic cod. Add cod pieces to the simmering broth and cook 5 to 7 minutes until opaque and flaky.

Balance the soup’s flavors. Add fish sauce, chili, and lime juice, then adjust the salty-sour balance.

Serve the soup hot. Ladle into bowls and garnish with coriander and lime.
