Fish Nuggets with Curry-Yogurt Sauce, Fried Potatoes & Carrots

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Serves: 3–4

Ingredients

For the Fish Nuggets

500g Pacific Bay Par-Fried Fish Nuggets
Canola oil, for frying

For the Curry-Yogurt Sauce

1 tbsp unsalted butter or oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ginger, minced
1 tbsp curry powder
½ cup vegetable broth (or water)
½ cup plain yogurt
1 tsp honey or sugar (optional)
Sea salt and freshly ground black pepper, to taste

For the Fried Vegetables

2 medium potatoes, cut into batons
2 medium carrots, cut into sticks
Canola oil, for frying
Pinch of sea salt

For Garnish

Dried parsley

Procedure

Fry the Fish Nuggets. Heat the oil to 175°C and fry the fish nuggets in batches for 3 to 4 minutes until crisp, golden brown, and heated through. Drain on paper towels or a wire rack and keep warm.

Prepare the Curry-Yogurt Sauce. Heat the butter or oil in a saucepan over medium heat. Sauté the onion, garlic, and ginger until fragrant and softened. Stir in the curry powder and cook for about 30 seconds to bloom the spices. Pour in the vegetable broth and simmer for 3 to 5 minutes before removing the pan from the heat. Stir in the yogurt until smooth, then season with sea salt, black pepper, and honey if desired.

Fry the Potatoes and Carrots. Heat fresh oil to 170–175°C and fry the potatoes and carrots until golden brown and crisp. Drain well and season lightly with sea salt while still hot.

Assemble the Dish. Arrange the fried potatoes and carrots on a serving platter, then add the crispy fish nuggets. Spoon the curry-yogurt sauce over the nuggets or serve it on the side for dipping.

Garnish and Serve. Finish with a sprinkle of dried parsley and serve immediately while everything is hot and crisp.

Notes

Why Pacific Bay?

Pacific Bay Par-Fried Fish Nuggets are made with real fish fillets and coated in a light, crispy breading that cooks beautifully straight from the freezer. They make it simple to recreate the satisfying crunch of Japanese curry katsu with far less prep. Real seafood made easy.

Chef's Tip

Add the yogurt only after removing the sauce from direct heat. High heat can cause it to split, while gentle mixing keeps the curry-yogurt sauce smooth and creamy. For extra-crispy nuggets, fry in batches and avoid overcrowding the pan.

Easy Alternatives

Use Greek yogurt for a thicker, creamier sauce or plain yogurt for a lighter finish. Swap the potatoes for sweet potato fries or wedges, and use baby carrots to reduce prep time. The same curry-yogurt sauce also works well with Pacific Bay Breaded Fish Burger Patties, Par-Fried Fish Fingers, Breaded Shrimp Popcorn, or Soft Shell Crab.

Serving Suggestions

Serve with steamed white rice for the full Japanese curry-katsu experience, or keep it casual with fries, roasted vegetables, or a crisp green salad. Add chili flakes, cayenne, or chopped labuyo if you prefer more heat, then finish with parsley or cilantro for a fresher contrast.

One Last Bite

Japanese curry katsu already has the comfort-food formula figured out: something crispy, something saucy, and something worth scooping up with rice. Fish nuggets simply make that idea easier to pull off on a busy night.

FAQs

Can I cook the Fish Nuggets from frozen?

Yes. Pacific Bay Par-Fried Fish Nuggets can be cooked straight from frozen. Fry, bake, or air-fry them until golden brown, crisp, and heated through.

Can I air-fry the Fish Nuggets?

Yes. Air-fry according to the package directions and turn them halfway through cooking for even browning. A light spray of oil can help the breading become more golden.

Can I make the curry-yogurt sauce ahead of time?

Yes. Prepare it up to one day ahead and refrigerate it in an airtight container. Reheat gently over low heat and avoid boiling once the yogurt has been added.

Why should I add the yogurt off the heat?

Yogurt can separate when exposed to high heat. Stirring it in after removing the pan from the stove keeps the sauce creamy and smooth.

Can I make the sauce spicier?

Yes. Add chili powder, cayenne pepper, or finely chopped labuyo while sautéing the onion, garlic, and ginger.

Can I use Greek yogurt instead of plain yogurt?

Yes. Greek yogurt gives the sauce a thicker, richer texture, while plain yogurt creates a lighter consistency.

What can I serve with Fish Nuggets and Curry-Yogurt Sauce?

Steamed rice, fries, roasted potatoes, sweet potato wedges, vegetables, or a simple salad all work well with the creamy curry sauce.

Can I cook the vegetables in an air fryer too?

Yes. Toss the potatoes and carrots with a little oil and air-fry until browned and tender, shaking the basket halfway through cooking.
