Savory Miso Shrimp Oatmeal - Pacific Bay

Savory Miso Shrimp Oatmeal

INGREDIENTS

30g rolled oats
1 cup water
½ tsp dashi powder
80g shrimp like Seareyna Hipong Pangsahog or Pacific Bay Jumbo Shrimp
1 egg
1 tbsp miso paste
black pepper
1 cup pechay or spinach, chopped
Optional:
½ tsp soy sauce
½ tsp sesame oil

Garnishes: green onions, chili flakes, sesame seeds

PROCEDURE

Cook the oats until creamy. Simmer oats, water, and dashi powder for 3 to 4 minutes until thick.

Add the shrimp and cook until just done. Cook shrimp in the oats for 1 to 2 minutes until pink and opaque.

Add the vegetables. Stir in the chopped spinach and cook briefly.

Incorporate the miso gently. Lower heat and stir in miso until it's fully dissolved. Do not let the oatmeal boil after adding miso.

Finish with the egg. Add egg to the pot. You can stir it for an egg-drop effect or leave it whole to poach gently for 1 minute.

Season and serve. Transfer the cooked shrimp and oats to a bowl. Top it with ½ tsp soy sauce for deeper umami and  ½ tsp sesame oil for aroma. Add your chosen garnish and dig in.
