Make your own cochinillo at home!
Simple cooking instructions
- Season the defrosted cochinillo with salt and pepper. Make sure to season the cavity well, too. Brush the pig liberally with olive oil.
- Place the cochinillo on a large baking tray, then place it in an oven that's pre-heated to 200-degrees Celsius. Pour boiled water into the tray 1 cup at a time, until it reaches the trotters. Close the oven door to seal in the heat.
- Every 10 minutes, brush skin with olive oil and add water to the base of the tray. For the 2.5kg pig, the skin should be crispy and golden brown after about 1.5 to 2 hours. It may take about 3 hours for the larger cochinillo.
- Once cooked, remove it from the oven, and let sit for 30 mins before serving.
Comes in in a plain sealed bag. Butterfly cut for convenience. This pig fits best in a 90cm width oven.
